I Need THE BEST Pastry/baking Book EVER!?

For all those pastry chefs/bakers--what is the best book I could buy? I really want one with clearly written instructions and as many pictures as possible.

My sister is starting pastry chef classes next month and I am looking for a GREAT Christmas gift for her!

She already has The Professional Pastry Chef: Fundamentals of Baking and Pastry--they needed it for class. I really want to add to her collection . . .

I fell in love with this beauty a year ago. You can find it at Barnes and Noble. I'ts wonderful. And it's written by staff from the Culinary Institute of America in Hyde Park, New York. Believe me, that is a top-notch school. Those people know what they're talking about.

There are only two that I would recommend and one is terribly expensive. The Professional Pastry Chef by Bo Friberg

The other is more for the home baker and not as expensive but will make very good reading and baking for a budding pastry chef: Baking Illustrated by Cooks Illustrated and America’s Test Kitchen

i love the Martha Stewart Baking Handbook –

you could also get books on specialized baking – gluten free – diabetic – organic/natural.

if she is into something specific – pies, cakes, decorating cakes, cookies, etc…. get her a book specific to her favorite thing to bake.

I collect cookbooks and have over 800 of them. I only have a few volumes dedicated to pastry and have not purchased one in several years on that subject. When you decide to buy, I recommend looking at the IACP, Julia Child or James Beard award winners. Any of the winners or nominees are a solid choice.
