Baking Bread In Dry Heat Of AZ — Tips So Bread Won’t Be "dry And Heavy" After Baking – ?

If there is a tip for baking homemade bread in the dry heat of the Arizona desert (specifically, Casa Grande, AZ) so that the freshly baked bread isn't dry and heavy, please share your insights, experiences, and knowledge! Thanks so much!

If your oven is a self-cleaning one, (as in a sealed bottom) you could throw a few ice cubes on the bottom of the oven during the first 5 minutes of the bread's baking. Or 1/2 cup of water. If your oven is gas, you could place a cookie sheet on the rack underneath the bread and carefully pour approx an inch of water into the tray. The steaming action will improve the rise of the dough and produce a good crust.
