Watch your mixing. When baking, most things are easily over-mixed and that's why most people, even when using a cake mix, end up with a chewy or tough product. Even if your batter looks lumpy after the recommended mixing time, stop. Chances are it's supposed to look that way.

Do not expect Splenda to sub for sugar.
Make sure your oven temp is accurate with a thermometer and use the best pans you can afford. Never use the black painted/coated pans as they cause burning.
mix your wet ingredients together apart from dry.
Do not overmix a baking soda or baking powder batter (cake, cornbread, pancakes, waffles) or you will have big bubbles and a tougher product. If recipe says only to mix till blended and batter will be lumpy, pay attention and don’t overmix.
Do not let batters sit before baking as the leavening will stop working. Always have the oven at temp before adding your wet to dry ingredients and place in oven immediately.
Use parchment to line bottom of pans where possible.
Always use fresh yeast for yeast dough baking
