Betty’s Perfect Loaded Baked Potato Recipe
Betty demonstrates how to make the perfect loaded baked potato in this video.
Ingredients:
2 large Idaho baking potatoes, washed and dried
cooking spray
sea salt
1/2 stick butter or margarine at room temperature
1/2 cup sour cream
1 cup shredded Cheddar cheese
1/4 cup snipped green onions
Heat the oven to 400 degrees. Cut off an appropriate length of aluminum foil for wrapping each potato. Place each potato on its piece of foil, spray with cooking spray, and grind some sea salt all over the potatoes. Wrap each potato in its aluminum foil and place in the 400 degree oven to bake for 1 hour and 15 minutes. While the potatoes are baking, prepare the following topping. In a medium-sized bowl, mix 1/2 stick butter or margarine (room temperature), 1/2 cup sour cream and 1 cup shredded Cheddar cheese. After mixing these three ingredients, add the 1/4 cup snipped green onions and blend in lightly. Remove the 2 potatoes from the oven, test for doneness by rolling them in your hand (with a potholder). They should feel slightly soft. Remove the foil covering them, and transfer each potato to its serving dish. Salt and pepper the potatoes to taste. Place a generous amount of topping on the top of each potato. Eat immediately while hot and delicious!

I think it tastes better, because the coating sinks in as it cooks. The main reason for the foil is to prevent an overcooked, dried outer skin of the potato. Thanks for asking!

I use oil and salt too but I’ve never rapped it in tinfoil. does that change the way it tastes? i just cross cut the top and leave it in the oven. xXx

You are welcome for the suggested toppings! You can vary the heat from 350 to 400, because the potato is in aluminum foil. That gives you flexibility to get other parts of your meal together. If you bake it without foil, you should go with the lower heat of 350 for about an hour and 15 minutes–just squeeze it with a potholder occasionally to see if it’s getting soft. Good luck with your potatoes!

My roomie and I Are huge fan of baked potatoes…we didn’t know how to bake it until I read a blog about baking it ..and the golden figure 1:15 for the potatoes..In that blog he advises 350 degrees preheated oven..(you say 400 degrees)…
I was looking for nice toppings..else otherwise potatoes are bland…I found a perfect one here..

It’s really great, if you are giving yourself a break from watching calories. If you are watching calories, use fat free sour cream, light butter, and low-fat cheddar cheese. That should help a lot, and it really won’t taste that much different–you still have the green onion and seasonings for free! Thanks for your comment!
