Best Baking And Pastry Book?

I just opened a small coffee shop and I am purchasin all my products from someone.
I have some free time at home and would like to learn how to bake and make pastries at home, on my own.
What would be the best book for a beginner?
I have never baked ANYTHING in my life.

If you are doing it for a coffee shop get a professional book. It will be using weight instead of cups a spoonful, but if you weigh everything your product will always be the same. One of the most important things in the food business is a good consistent product. Your coffee should always be the same and so should your pastry.

This is a text book use at CIA (Culinary Institute of America). It is a good book and has many useful recipes.

Another good one is the Professional Pastry Chef. Don’t let the title fool you, It has recipes just like any other book.

I love the baking recipes in the Fannie Farmer cookbooks, I don’t think I’ve been disappointed in a cookie recipe yet. Gayle Gand used to have a great show on the Food Network, I haven’t read any of her cookbooks but they may include some of the tips she’d share on her TV show. I found the Martha Stewart Pies & Tarts cookbook breat for those things. Both Martha Stewart and Food Network have videos on their sites that may be helpful.
