Hey there guys, Another quick question about pizza. I use an Aga and I wish to know what type of Baking tray/sheet to use to get the best result. Thanks.
Since pizza stones have a habit of cracking, the best pan on which to cook pizza would be Mario Batali's enameled cast iron pizza pan, made by Copco. It's a great heat conductor (cooks evenly and quickly) and doesn't require seasoning (typically a must for cast iron pans)...just rinse and it's ready to use again. Looks nice, too!

either put it on a pizza stone, or just on the wire rack. putting a pan under it will get u soggy crust!!

Pizza stone is best, but you can preheat your cookie sheet to oven temp then slide the pizza onto it and bake it without getting soggy crust.
Does not matter what sort of oven one has, as in brand name, as long as you get the temperatures correct.

I used to teach cooking classes, and have worked selling pans of all types.
I find that the simplest way is to use a round aluminum pan.
It won’t rust, you don’t have to season the metal, and as long as long as you make sure the oven is hot enough, you’ll get a good brown crust on the bottom.
A stone is great if you enjoy preheating your oven for at least an hour, and if you like tons of cornmeal under the crust. I don’t have the patience for those 2 issues, myself.
